Where does our meat come from?

Unless labeled as local, our beef is supplied by a family farm co-op in Colorado, producing the most flavorful and tender Black Angus Beef we have found.

What does "Dry-Aged" mean?

Dry aged beef is beef that has been hung or placed on a rack to dry for several weeks.  This process changes the beef in two ways.

First, the moisture is evaporated from the muscle which creates a greater concentration of beef flavor and taste.  Second, the beef's natural enzymes break down the connective tissue in the muscle, which leads to more tender beef.
